![]() ![]() ![]() Evaporated milk contains protein micelles, which help keep an emulsified sauce smooth and creamy. Cooking in water and adding evaporated milk toward the end fixes this problem. In a large skillet, stir together 2 cups chicken broth, 2 cups milk or cream, butter, salt and pepper. Cooking macaroni in a small volume of water concentrates the starch from the pasta, helping the cheese form a creamy emulsion. Why use evaporated milk in mac and cheese? Continue to whisk for around 4-6 minutes, or until things begin to thicken. Step 2: Whisk in Milk slowly add milk to the roux, whisking constantly so it doesn’t burn. Cook it perfectly on the first round, and you’re guaranteed to end up with soft, soggy pasta after phase two. Whether you’re making stovetop or baked mac and cheese, remember that the pasta gets cooked a second time. Cooking the pasta is just the first phase of the process. Feel free to experiment with other add-ins, like using baked beans in place of canned beans or spicy stewed canned tomatoes, such as Rotel, in place of the salsa. Mix in drained and rinsed canned black beans and 1/2 cup salsa, or more, to taste. Prepare mac and cheese according to package directions.
